Apricot crumble slice (AWW)




  • 90 g unsalted butter
  • 150 g plain flour
  • 75 g caster sugar

Coconut topping

  • 90 g unsalted butter
  • 75 g plain flour
  • 30 g dessicated coconut
  • 15 g Shredded coconut
  • 110 g brown sugar

Apricot filling

  • 250 g water
  • 250 g dried apricots
  • 55 g caster sugar

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven to 180°C conventional or 160°C fan.
  2. Melt butter 2 min / 60°C / 3.
  3. Mix in sugar and flour 5s /sp3. Scrape and repeat.
  4. Press into lined and greased slice tin. Bake for 20 mins.
  5. Coconut topping
  6. Melt butter 2 min / 60°C / sp 3.
  7. Add coconut, flour and sugar 20s / sp 2. Scrape. Repeat if necessary. Set aside.
  8. Apricot Filling
  9. Chop apricots 10s / sp 6.
  10. Add water and sugar 10 min / 100°C / using simmer basket, instead of measuring cup. Continue cooking until thick (like jam).
  11. Pour filling onto slice base.
  12. Crumble coconut topping on top and bake at 180°C for 20 mins.
