  • 150 g walnuts
  • 350 g brown sugar
  • 2 teaspoons baking powder
  • 310 g plain flour
  • 250 g Butter
  • 1 teaspoon bicarb soda

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Armenian Nut Cake
  1. Line a lamington tin with baking paper.
  2. Add walnuts and chop 2 secs sp 6. Set aside.
  3. Add brown sugar, baking powder, flour and butter mix 10 sec sp 6. Mixture should resemble breadcrumbs.
  4. Evenly spread 1/2 mixture over base of lamington tin and press into place.
  5. Add bicarb soda, milk, egg and nutmeg to remaining 1/2 mixture in TM. Mix 4 seconds at speed 5.
    Pour on top base.
    Sprinkle with chopped walnuts.
  6. Bake in moderate over for approx 50 minutes.
    Cool in tin for 5 minutes then slice.
