395gm sweetened condensed milk

  • 1 can sweetened condensed milk, I use skim milk version!!!
  • 250 g brown sugar
  • 25 g glucose syrup
  • 80 g unsalted butter cubed
  • 180 g good quality dark chocolate broken into pieces
  • 50 g Baileys Irish Cream

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Grease and line tin for fudge.  I use a square tin, however rectangular works well too.

    Add condensed milk, brown sugar, glucose syrup, and butter to TM and cook 8 mins, 100deg, speed 3/4.

    Scrape down sides and base of bowl and cook, 20 mins, Varooma speed 3/4.

    Immediately add chocolate and Baileys Irish Cream and mix 15 sec on speed 3 .

    Spoon immediately into prepared tin.  Cool the place I. Refrigerator for 1 hour prior to cutting.

    Any tips?

    I'm not sure what I've done wrong as aside from glucose syrup (used honey as didn't have any) I followed the recipe. Mine is still semi hard and sticky. I've put in the freezer so I can at least cut it. It tastes amazing though!
