Banana and Blueberry Cake

  • 1 punnet of Blueberries
  • 3 ripe bananas
  • 125 grams Butter
  • 3 eggs
  • 200 grams plain yoghurt
  • 270 grams Self Raising Flour
  • 2 tablespoon LSA (blended linseeds, sunflower seed, almonds)
  • 2 tablespoons honey

Recipe's preparation

    Banana and Blueberry Cake Batter
  1. Preheat oven to 180°C.  Lightly grease and line 25cm tin with baking paper.

    1. 2. Place butter into bowl and melt for 2 minutes on 60°C on speed 1.
    2. 3. Add bananas, eggs, honey, LSA and yoghurt.  Mix for 5 seconds on speed 5.
    3. 4. Add self-raising flour and mix for 10 seconds on speed 5.
    4. 5. Add blueberries and mix through mixture by hand using spatula.
    5. 6.  Pour mixture into cake tin. Bake for 40 minutes.

Tip

Make your own LSA using TM recipe:

250 g linseeds
165 g sunflower seeds
85 g Dry Roasted Almonds

Mill on speed 9 for 20 seconds or until desired consistency reached.

    I make these for my toddler, I use Rice Malt Syrup instead of Honey and Chia instead of LSA. Love that they are not full of sugar and I can send them in the school lunch box without feeling guilty!

  • My oven is weird but it took

    My oven is weird but it took way longer to cook... Quite a plain cake but I like that there is no added sugar so happy for my bub to eat some tootmrc_emoticons.)
