Best banana bread I’ve ever made. Reduced sugar to 100 and also only had 45g of maple syrup so made up the rest with golden syrup. Will make every time I now have over ripe bananas. So easy and makes the house smell so nice.

Absolutely delicious banana bread - my kids' favourite! I have made it numerous times and tweak the ingredients as I go. I use coconut sugar and reduce the amount to 100g. I also use 60g rice malt syrup instead of maple syrup and 1/2tsp of cinnamon. I also omit the walnuts. As long as you have ripe bananas, I don't think there is a need for a lot of extra sweetners. Smile

A great recipe. I found that using bananas that I'd frozen then defrosted (don't be scared if the bananas turn black, they have such a strong banana flavour) made it even yummier and so moist. Thanks for sharing

Amazing, such a lovely flavour and so amazing sliced and toasted. I sliced mine up and put in the freezer, then you just thaw out in the fridge overnight and great as a breakfast at work toasted in a sandwich maker.

I also added half a cup of desicated coconut from preivous recipies which added another great dimension to the flavours.

  • Beautiful!...

    Submitted by ajh268 on 23. September 2018 - 06:23.

    Beautiful!
This is such an easy recipe (I especially love that all steps are covered with the Thermie...no mashing your own bananas or melting your own butter, it’s all built into the recipe already!), and makes such a delicious banana bread that truly tastes like the cafe style stuff. I followed the recipe exactly, but added 45g of pecans (because that’s all I had and didn’t have any walnuts) and the extra flavour and texture is just perfect. I also had to bake for an extra 7 mins (1:07 all up) at 160degs in a fan forced oven.
    Love it! Thank you tmrc_emoticons.)

You can’t go wrong with a Donna Hay recipe! This thermomix adaptation is now my go-to recipe for banana bread. We’ve made it too many times to keep count. It’s quick and easy to prepare, freezes well and tastes delicious. We love it with walnuts, but do generally leave them out so it can safely go in school lunchboxes. Thanks for sharing.

Not usually a banana bread fan however felt like some today and came across this recipe. It’s delicious straight out of the oven. I reduced sugar to 100g as per comments and found it to be still a bit seeet for me by the time I got through a whole piece. I will halve sugar next time. Cooked in kmart silicon mini loaf pans for 30 minutes and got 10 mini loaves. Thanks for the easy recipe.

This is a regular in our house. I reduce sugar to 100g and it's still plenty sweet enough with the maple syrup. Im also generous with the cinnamon. In my gas fan forced oven it takes about 55 mins. Freezes well too!

Mmmm... smelt so delicious while it was baking. Tasted great straight out of the oven. I think this is the best cafe style banana bread I've made. Hubby prefers it with more banana lumps so may put my banana in later next time.
Also I sprinkle mine with a mixture of raw sugar and cinnamon before baking for a nice crunchy top!
