Banana Bread Cafe Style

Ingredients

12 slice(s)

Banana Bread

  • 130g Butter, roughly chopped
  • 160g brown sugar
  • 280g ripe bananas, halved, (Approx 3 bananas)
  • 1 tsp vanilla extract
  • 2 eggs
  • 250g plain flour
  • 1 tsp baking powder
  • 1/2 tsp Bi-carb soda
  • 1/4 tsp ground cinnamon
  • 75g Maple syrup
  • 50g Californian Walnuts, (Optional)

Recipe's preparation

  1. 1. Preheat oven to 160deg.  Grease and line a loaf tin with baking paper.

    2. In your TM weigh in butter and soften at 60deg / SP 4 / 1.30 mins

    3. Scrape down the sides, add brown sugar and mix 30 secs / SP 4

    4. Add bananas and mix 5 secs / SP 5

    5. Scrape down sides of bowl and add all other ingredients, (Except Walnuts), mix 5 secs / SP 5.....scrape sides and mix 5 secs / SP 5

    6. Add walnuts (if using) and mix 8-10secs SP 5

    7. Pour batter into prepared tin and bake for 1 hour on 160degs. Check with a skewer, if it is sticky bake a bit longer!

    8. Let bread cool slightly in tin, transfer to a wire rack.  Slice and smear with butter. Yummy!

    Tastes amazing! However, I did have to adjust to dietary needs - I used my Gluten Free flour dregs ( a mixture of Sophia's Kitchen GF flour recipe and the thermomix GF flour recipe - with a bit of fear and trepidation I might add) and also added in about 1/2 tsp xantham gum. I reduced the sugar to 80gm and it was still sweet enough. I might try it with golden syrup next time as that is what is in the original Donna Hay recipe, and I only used 245gm of very ripe bananas. I made mine in a smallish bread loaf tin - 17cmL x 11cmWx10cmD) so that it came out like the Cafe Banana Style Bread. The little that was left over still tasted great the next day.

    A big hit with the family, had slightly less maple syrup but still turned out fine and also added in 90gm dark choc chips instead of walnuts (didn't have any on hand). Will reduce the sugar slightly next time. Definitely saving this recipe for next time!

    Absolutely delicious! I halved the sugar and probably wouldn't add next time. I think the maple sugar would be enough sweetness for me.

    I used gluten free flour and extra cinnamon and it is beautiful. So moist. Baked for 50 minutes. Even my fussy 14yr old who "hates" bananas loved it.

    Best banana bread I’ve ever made. Reduced sugar to 100 and also only had 45g of maple syrup so made up the rest with golden syrup. Will make every time I now have over ripe bananas. So easy and makes the house smell so nice.

    Absolutely delicious banana bread - my kids' favourite! I have made it numerous times and tweak the ingredients as I go. I use coconut sugar and reduce the amount to 100g. I also use 60g rice malt syrup instead of maple syrup and 1/2tsp of cinnamon. I also omit the walnuts. As long as you have ripe bananas, I don't think there is a need for a lot of extra sweetners. Smile

    A great recipe. I found that using bananas that I'd frozen then defrosted (don't be scared if the bananas turn black, they have such a strong banana flavour) made it even yummier and so moist. Thanks for sharing

    Amazing, such a lovely flavour and so amazing sliced and toasted. I sliced mine up and put in the freezer, then you just thaw out in the fridge overnight and great as a breakfast at work toasted in a sandwich maker.

    I also added half a cup of desicated coconut from preivous recipies which added another great dimension to the flavours.

    This is such an easy recipe (I especially love that all steps are covered with the Thermie...no mashing your own bananas or melting your own butter, it’s all built into the recipe already!), and makes such a delicious banana bread that truly tastes like the cafe style stuff. I followed the recipe exactly, but added 45g of pecans (because that’s all I had and didn’t have any walnuts) and the extra flavour and texture is just perfect. I also had to bake for an extra 7 mins (1:07 all up) at 160degs in a fan forced oven.
