Banana Cake with Cream Cheese Icing

Banana Cake

  • 300 g caster sugar
  • 125 g softened butter
  • 250 g medium very ripe bananas
  • 1 teaspoon vanilla
  • 2 eggs
  • 225 g Self Raising Flour
  • 1/2 teaspoon bicarb soda
  • 120 g Milk or Buttermilk

Cream Cheese Icing

  • 90 g cream cheese
  • 45 g Butter softened
  • 210 g icing sugar
  • 1 tablespoon lemon juice

Recipe's preparation

    Banana Cake
  1. Preheat oven. to 170 degress celsius.  Grease and line a 22cm cake tin. 

    Place sugar, (mill on speed 7 for 3 seconds if using raw sugar), butter, banana, vanilla and eggs into TM speed 6 for 1 min.  Add milk or buttermilk and turbo once or twice until combined.  

    Add flour and bicarb and mix on speed 4 until just combined. (2 seconds).  Pour batter into tin.

    Bake for about 50 - 60 mins, or until a skewer or knife inserted in the centre of the cake comes out clean.

    Leave cake to cool on a wire rack.  Spread cooled cake with cream cheese icing.  

    Mix cream cheese and butter on speed 4 for 10 seconds.  Add icing sugar and lemon juice and mix until smooth.

    Amazing recipe. I made the cake exactly to the recipe, except I baked it in a lamington pan to make it a sheet cake. It turned out exactly like I had hoped. There was ample icing to cover the entire cake. Definately a keeper. Thanks for sharing this recipe!

    What a great, easy recipe. Like most other commentors, I reduce the added sugar amounts and the cake turns out perfectly every time. I've even made this as a gluten free cake, with a 1-to-1 gluten free flour and it was just as good. Thanks for a fab recipe!

    Ihave made this cake several times and it always turns out beautifully. Today I took a risk and just whacked everything in at the same time (after softening the butter), blended on speed 4, stirring once, for about 1 minute. It still turned out! I use a loaf tin too. Thanks for a great recipe!

    Love this recipe. This ia a lunchbox staple in our house. I don't ice it as one of my twins doesn't like icing and, I reduce the sugar. I bake in loaf tin and once cooled I slice into individual protions and freeze. I also used the same recipe to make banana cupcakes they were also great. I'm about to make again but think I will put choc pieces in the cupcakes this time just to mix it up. Thanks for sharing. tmrc_emoticons.)

    Feedback is excellent on this, 5 stars!! Im a very health conscious mother to a 2yr old toddler, hand-make all her food, and pull back unnecessary sugars / additives/salts always, but still try to find a balance of flavour that allows adults to enjoy the food i make too .. so if youre a similar minded person you may find this feedback helpful ..

    CAKE:Brought back sugar to 100gm in cake, and definitely fine from a sweetness persepective (especially bc the icing sugar on the CC frosting adds to the sweetness of this so hence pulling back in cake is fine) Pulled back to 100gm butter too (softened it in microwave THEN.. realised once it was in the oven cooking i forgot to add butter completely!!! Freaked out & have just tasted it, there is no difference whatsoever, soft and moist and binded well so this is interesting!!) used 120 of milk as advised.

    FROSTING: Perfect consisitency .Didnt have lemon so omitted it = FINE! And again, im not into sugar for my toddler, so pulled back the icing sugar to ... 70gm + 90gm CC + 50gm butter = Perfection, still so sweet i imight pull back to 50gm icing next time & will make me feel better about sugar for bubs and keep fine tuning.. BTW i cooked the cake in a loaf tin for 60 min & had excess frosting so pulling back on icing sugar did not lose out on layering on the cake. 

    Hope this helps others ... Loved it!!

    I love this recipe. Today I put a little bit less sugar in it and threw in some choc chips on the top - they all sunk! Very happy with it. I do prefer to use a loaf tin shape as I find it helps stop the sinking in the middle a littl bit.
