- 3 bananas, Ripe
- 130 g sugar, white
- 100 g Butter
- 1 egg
- 20 g Milk, cold
- 1 teaspoon bicarb soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 250 g plain flour
- 80 g chocolate chips

Recipe's preparation
1. Preheat oven to 190 deg. Grease texas muffin pan.
2. Add butter to thermomix bowl. Melt for 2 mins 100deg speed soft. Add cold milk, then egg and mix for 5 sec, sp4. Place in a seperate bowl.
3. Put bananas and sugar in tmx bowl. Mix for 10 secs, sp 6. Put butter mix back into bowl and mix for 5 secs, sp 4.
4. Add dry ingredients. Mix for 10 secs, sp 4.
5. Add choc chips. Mix for 5 secs, sp 4.
6. Pour into muffin pan. Bake for 15-20 mins.

Oh my goodness, this is the best muffin recipe...
Oh my goodness, this is the best muffin recipe ever!!! I always handmade my muffins as I was taught that over mixing ruins the texture, so I avoided thermomix muffin recipes. But the method you outline ensures the mixture isn't over-mixed and the texture is incredibly soft and fluffy - even nicer than café muffins! I used macadamia oil instead of butter, reduced the sugar to 90gms, and chopped up about 100gm of dark chocolate and added it with the dry ingredients at the end. I only mixed the dry ingredients for 5 seconds instead of 10 (due to my fear of over-mixing) and it was perfect! Thank you!!!

I did as everyone else seems to have, left everything in together, I didn't melt the butter, didn't need to. Used only 50g of raw sugar & that was plenty with the choc chips. Everybody loved them.

I made these gluten-free and dairy-free (and without bananas) with the following changes:
I substituted:
1 cup frozen mixed berries (instead of banana)
250g buckwheat flour (instead of regular plain flour)
80g raw sugar (instead of 130g white sugar)
60g rice milk (instead of dairy)
80g gluten-free, dairy-free cooking choc chips
Seems like a very easy recipe to play around with (I'm definitely no expert cook!)
