My go to recipe now! Great texture, they rise lovely and have a soft top. Only changes were reducing the sugar to 95g and not removing butter from the bowl, didnt seem necessary. Will try reducing the sugar again next time and hopefully keep the same texture. Made about 36 mini muffins

Lovely fluffy mufins. I used 65g milled raw sugar, but next time I'll reduce to 50g as they were still pretty sweet. As long as you are using ripe bananas, I really don't think you need too much sugar as the bananas are sweet enough. Great recipe. Thanks for sharing.

    Submitted by Jo.dances on 24. April 2020 - 12:31.

Oh my goodness, this is the best muffin recipe ever!!! I always handmade my muffins as I was taught that over mixing ruins the texture, so I avoided thermomix muffin recipes. But the method you outline ensures the mixture isn't over-mixed and the texture is incredibly soft and fluffy - even nicer than café muffins! I used macadamia oil instead of butter, reduced the sugar to 90gms, and chopped up about 100gm of dark chocolate and added it with the dry ingredients at the end. I only mixed the dry ingredients for 5 seconds instead of 10 (due to my fear of over-mixing) and it was perfect! Thank you!!!

Easy, soft texture & lovely taste. The reason I only gave 4 stars is because I think the instructions need updating. I did as everyone else seems to have, left everything in together, I didn't melt the butter, didn't need to. Used only 50g of raw sugar & that was plenty with the choc chips. Everybody loved them. Delicious! My fairly-picky five year old says so!
I made these gluten-free and dairy-free (and without bananas) with the following changes:

    I substituted:
1 cup frozen mixed berries (instead of banana)
250g buckwheat flour (instead of regular plain flour)
80g raw sugar (instead of 130g white sugar)
60g rice milk (instead of dairy)
    80g gluten-free, dairy-free cooking choc chips

Seems like a very easy recipe to play around with (I'm definitely no expert cook!)

Thank you so much for this recipe! Absolutely love it. I've been making this batch weekly to use up over ripe bananas. I have to confess we double the choc chips and also sometimes add in some sourdough starter when we have left overs for a more wholemeal taste - so good!!
