Banana & Choc Chip Muffins

  • 3 bananas, Ripe
  • 130 g sugar, white
  • 100 g butter
  • 1 egg
  • 20 g milk, cold
  • 1 teaspoon bicarb soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 250 g plain flour
  • 80 g chocolate chips
  • 6

Recipe's preparation

  1. 1. Preheat oven to 190 deg. Grease texas muffin pan.

    2. Add butter to thermomix bowl. Melt for 2 mins 100deg speed soft. Add cold milk, then egg and mix for 5 sec, sp4. Place in a seperate bowl.

    3. Put bananas and sugar in tmx bowl. Mix for 10 secs, sp 6. Put butter mix back into bowl and mix for 5 secs, sp 4.

    4. Add dry ingredients. Mix for 10 secs, sp 4.

    5. Add choc chips. Mix for 5 secs, sp 4.

    6. Pour into muffin pan. Bake for 15-20 mins.

    I had some very ripe bananas, kitchen staples, and about 15 minutes.... now I have lunch box snacks! I don't like bananas, but my husband and kids are happy with them :)

    Banana & choc chip muffins - These are a real hit in our house! I reduce the sugar to 70g and up the chocolate chips to 120g (I use dark choc chips), and cook in a mini-muffin tray for 10-12 minutes at 180 degrees, perfect! I don't add the salt, I also don't remove the mix from the bowl at step 2, I simply add the bananas and sugar straight to the bowl. These freeze really well too. Thanks for sharing!

    These were amazing! I used 100g honey instead of sugar and I didnt have any baking powder so used SR flour instead. Perfect! I actually got 12 muffins and 24 mini muffins out of this mix. Going to try with carrot instead of choc next time. Thanks for the recipe :smile:

    Light, fluffy and delicious banana choc chip muffins. 

    I also didn't take out the butter but it didn't affect the end result. This made me 12 muffins and 12 mini muffins. Kids loved it. I would probably reduce the sugar to about 80-90g next time.

    Amazing!!! Finally a muffin recipe that is sooo light and fluffy! Unfortunately had no choc chips but kept all ingredient quantities the same but added x2 tablespoons of golden syrup & 60 grams of dates and a couple drops of vanilla extract --- spectuacular!!!! Thankyou!

    Delicious!! I only had one very ripe banana, the other two were just ripe so not very sweet but sweet enough. Used 100gm of rice malt syrup instead of sugar and added fresh blueberries instead of choc chips. My fussy nearly 2.5 year old ate 4 or 5 tonight! I lost count and she doesn't usually ask for more and not a fan of fresh blueberries. Thank you so much for sharing!

    These are great! Kids and adults loved them! Like others, I left the butter in the bowl. I would use Counter-clockwise operation after the choc chips are added. I ised 55g honey and 45g sugar - might use only honey next time. I might also try with sultanas instead of choc chips for something different. Great recipe though, thanks!

    Like others I just left the butter in the thermi and added the ingredients to it. I cut the sugar to about 70 grams and were perfect. Could probably cut it back further.

    Will definitely be adding these to our regular freezer stash for school lunches.

    These were lovely! So quick and easy to make for a hungry toddler. I made 24 meduim sized muffins. I also just added everything to the butter mixture in the bowl. I only had raw sugar so I used 100g.

    A fabulous way to use those over ripe banana's.

    Very generous sized muffins, will try Mini muffins next time for kids lunchboxes.

    Instead of choc chips I prechopped some dark chocolate, was very yummy with the rich, bittersweet pieces through out!

    I woke up this and decided to clean out my fridge. Discovered I had some bananas to use so looked for a quick and easy recipe to put together. Came across this recipe and thought, "Why not?"Very pleased that I gave it a go. This recipe was very easy to follow and used basic ingredients that I had on hand. The smell as they were baking was divine and the results are just perfect (super yummy).
