Banana coconut bread

Ingredients

0 portion(s)

  • 40 grams Butter
  • 180 grams brown sugar
  • 230 grams ripe bananas, About 3 bananas or 1 cup
  • 1 egg
  • 250 grams Self Raising Flour
  • 1 teaspoon baking powder
  • 2 tablespoon Milk
  • 50 grams desicated coconut

Topping

  • 1 tablespoon sugar
  • 1 teaspoon ground cinammon

Recipe's preparation

  1. Prehead oven to 180 Celcius. Grease and line base of a loaf tin.


    1. Place butter, sugar, egg and banana in TM bowl and mix on speed 5 for 10 seconds then scrape down sides.


    2. Add flour, baking powder, coconut and milk  and mix on speed 5 for 4 seconds or until combined. Pour mix into loaf tin.


    3. Mix topping ingredients and sprinkle over the top of the top. 


    4. Bake for 40-45 minutes or until golden brown

    I got my thermomix on Monday and this was the first recipe i attempted in it on my own, made a few minor modifications by reducing the sugar amount by half and added 2 teaspoons of cinamon to the batter and it was delicious, this will become a weekly bake for me. thanks for sharing the recipe tmrc_emoticons.-)

    These were so very easy to bake! Personally found it a little drier than I expected.  Retrospect Probably should have popped the whole 3 bananas in, instead of capping it at the 230g. I also reduced the sugar to 110g as we dont like things too sweet. Just needs a good slather of butter to go with it once its cooled & the dry doesnt matter.  Having said that, the kids ate the lot within the day! tmrc_emoticons.-)

    Popular banana bread recipe with the kids.  I also halved the sugar and it was definitely sweet enough. Didn't add the coconut and used my smaller loaf tin and it made a nice high loaf.

    150g sugar 

    Had no baking power so used 1/4tsp bicarb with 1/4 tsp sour orange juice because I had no lemons

    I really enjoyed this version, I have tried a few and this is now my go to recipe. I used wholemeal flour and cut the sugar down to 50 grams dark brown sugar and 30 grams of stevia and it was perfect. My 3 bananas weighed in at 310 grams.

    60g butter

    100g dark sugar

    1 tsp cinnamon in the mixture

    1/2 tsp nutmeg

    1tsp vanilla extract

    gluten free flour.

    This was beautiful! I increased butter to 60 grams & decreased sugar to 100 grams & was lovely & moist & sweet. I added a little vanilla essence. Made these into 8 small toddler sized muffins & 7 large adult muffins. Was beautiful & crumchy on top & soft & fluffy inside. Will make again, thank you.

    OMG this is the best banana bread I've had in YEARS! I recently tried (unsuccesfully) to convert my old favourite recipe to the Thermie but it was a disaster.

    I actually didn't follow the instructions properly for this one and accidentally put the flour in with the first lot of ingredients. So, I ended up chucking everything in at once and just doing both mixes at the same time. It worked out perfectly. I especially love the cinnamon sugar top, which made it kind of crunchy on top.

    Used as a base.... changed a number of things: little bit more butter, less sugar but added little bit of golden syrup and stevia, used spelt plain flour and about 70g al mm ond meal. Added walnuts too. Oh and used about 300g bananas. In the oven and smells lovely.

    Super yum! Have made this twice now. Increased butter to 60g, decreased sugar to 100g and used coconut sugar. I also used wholemeal flour and shredded coconut instead of desicated coconut. I used smaller loaf tins x2 (1 to keep at home and 1 for morning tea at a friends) and baked for about 30 mins. Thank you for a great recipe  tmrc_emoticons.)
