  • 200g raw sugar
  • 125g Butter
  • 1 egg
  • 3 ripe bananas
  • 1/2 tsp bicarb soda
  • 30g Milk
  • 230g Wholemeal SR Flour

Recipe's preparation

  1.  

    Preheat normal oven 175C

    Prepare muffin tins with large patty pans (if not using silicone)

    Place Raw Sugar in bowl and mill 4 sec/speed 9

    Add Butter and mix 15 sec/speed 5 then scrape down sides

    Add Egg and and mix 20sec/speed 5

    Add Bananas, Milk, Bicarb Soda, SR Flour and mix 5 sec/speed 4. Scrape sides if needed and mix 2 sec/speed 4

    Pour into prepared muffin trays

    Bake 20-25mins until lightly golden

    Allow to cool 10 mins in tray before cooling on cake rack

Tip

White SR Flour can be used if preferred

Add a spoonful of wheatgerm or LSA for extra hidden goodness!

This is mums recipe and the original was for a cake which is the same but baked 45mins in a cake tin.
