Bananacado Bread

Ingredients

10 slice(s)

  • 1 large avocado
  • 30 g oats
  • 140 g flour plain
  • 1 teaspoon baking powder
  • 1 teaspoon bicarb soda
  • 1 teaspoon cinnamon
  • 225 g brown sugar
  • 2 eggs
  • 2 large very ripe bananas, sliced
  • 60 g Milk
  • 40 g Olive oil or coconut oil

Recipe's preparation

  1. Preheat oven to 175 degrees Celcius.

    2.Scoop flesh of avocado. Add oil and sugar. Insert butterfly, cream for  10 seconds on speed 4

    3. Add eggs, blend on speed 4 for 3 seconds. Remove butterfly

    4.Add bananas, mix in on speed 4 for 10 seconds

    5.Add dry ingredients, mix on speed 4 for 15 seconds 

    6.Add milk and mix on speed 4 for 4 seconds

    7.Pour into greased loaf tin and bake for 1 hour and 10 minutes. Cake remains quite moist and may not pass the "toothpick test". Continue baking if you prefer a drier bread.

Tip

Sugar can easily be halved and still be delicious.

    This is a winner! Cut the sugar to 100g (was more than enough). The comment I received the most from those that tasted it was "this is so much nicer than normal bananna bread"
