Cookie Dough
- 200 grams sugar
- 180 grams Butter, At room temperature
- 2 eggs
- 250 grams plain flour
- 10 grams baking powder
- 70 grams Cornflakes
- 70 grams crushed nuts
- 70 grams sultanas
- 70 grams Extra cornflakes, To roll in

Recipe's preparation
Pre-heat oven to 160 degrees.
Add Sugar and Mill for 5 seconds on speed 9
Add softened butter and mix for 10 seconds on speed 5, at the end of the 10 seconds add in the eggs and mix for 20 seconds on speed 5.
Add flour and baking powder and mix for 20 seconds on speed 5
Add Crushed nuts and sultanas and mix for 10-20 seconds speed 4
removed dough from TM bowls and tip into another bowl and incorporate the Cornflakes gently by hand.
roll dough into balls and then roll in the extra cornflakes and place on a baking tray, (you can make them as big as you like) - they will spread out slightly on the tray.
Bake for 20-25 minutes, allow to cool on the tray before moving them

Fantastic recipe. I left out the nuts and added 100g choc chips. Mixed in the sultanas, choc chips and 100g cornflakes at step 5 on reverse so as not to break them up too much. Turned out beautifully. And yes, wet hands when rolling helps heaps. Just like the old school chocky rocks! I didn’t roll them in cornflakes at the end as I added extra at step 5. Just perfect

These are soooo good! I used spelt flour, 150gms of sugar, Freedom gf cornflakes and substituted choc chips for nuts. For my own reference I used a fan forced oven at 140 degrees. One of the nicest thermie biscuits I've tried. Yum

Yum.... this recipe is like a little ray of sunshine from my childhood. I remember these biscuits fondly and I love that I can recreate them for my kids with the thermy.
I too reduced sugar (to 140gm) and used coconut instead of nuts. I also only added 2 tsps of baking powder (5gm) as 10gm seemed like too much...? They were just perfect.
It was hot here today so I fridged the dough for a few mins before rolling into balls to make it less messy and they were a dream to roll.

This receipe reminded me of
This receipe reminded me of the cornflake biscuits I ate from a old lady across the road When I was little. Loved the taste, the kids loved them. I used 50g coconut instead of crushed nuts. Yes the mixture is running but just wet your hands before you start to roll into balls and repeat a few times. I also ran out of trays and placed the remaining in mini muffin tray worked good just not the cruch. Thanks for sharing.
