Best Ever Mud Cake

Ingredients

30 slice(s)

Mud Cake

  • 350 g dark chocolate
  • 225 g Butter
  • 600 g water
  • 3 eggs
  • 250 g sugar
  • 400 g SR flour

Recipe's preparation

    Mud Cake
  1. Grate chocolate 5 secs on spd 8

    Add butter and water and cook for 3 mins, spd 3, temp 50 deg.

    Cool slightly (until 37 deg at least)

    Add eggs on at a time on spd 3 until combined.

    Add sugar and flour and mix on speed 4 for 30 secs

     

    Cook for 45-60 mins in oven 180 deg...

Tip

I use either a 23, 25, 30 cm tin, round or square. 

I use this cake as a base for parties. Have used for wedding cake as well. Is great for stacking.

This cake cannot be cooked in a springform tin as mixture is very runny.

Mixture can be doubled to make a high cake for decorating.

    Thanks so much for this recipe.  I had a very similar non TMX recipe and I always use it for special occasion cakes.  It is easy to make, stays moist and also freezes well.

    Did not release it, I just tipped it out but some of it stuck to foil. Maybe I didn't put it in the oven for long enough (about 51 mins) as it started self saucing itself! It was more like a pudding rather than a cake as it was so filling, but it was divine licking the spoon clean! I put in 200g sugar and it was still more than enough. Also a bit crumbly but if you're feeling like chocolate it is the perfect treat.

    Really wanted to make this cake but only have a spring form tray, will it be ruined if i cook it in the tray but dont 'release' it to get it out? just tip it out like a normal cake? really didnt want to go buy a new cake tin haha.
