Recipe's preparation
Preheat oven to 200C.
Place butter in TM bowl and melt for 1.5 minutes at 60C on speed 3.
Add egg and milk into bowl mix for 5 seconds on speed 4.
Add flour, honey and brown sugar to TM bowl and mix for 10 seconds on speed 4. Scrape down sides.
Add blueberries to TM bowl and combine for 5 seconds, reverse on speed 3.
Put mixture into muffin patties and bake at 200C for 15 minutes.

This recipe was a huge hit
This recipe was a huge hit with my family. I substituted half of a mashed banana instead of the egg (didn't realise that I didn't have eggs until I started cooking) and reduced the sugar to 70g of coconut sugar instead. Also used fresh blueberries instead of frozen as they were on special. Very moist, tasty and not too sweet.

These were a disaster!! I don't know what I did but they didn't cook at all. My 6 year old tried one anyway and couldn't finish it as she said it was too sweet. What a waste of an $8 punnet of blueberries!!
