Ingredients

  • Please enter the ingredients in the following order:
  • 90 g Butter
  • 1 x egg
  • 180 g Milk
  • 100 g brown sugar
  • 1 tbps honey - heaped
  • 240 gself raising flour
  • 120 gfrozen blueberries

Recipe's preparation

  1. Preheat oven to 200C.

     

    Place butter in TM bowl and melt for 1.5 minutes at 60C on speed 3.

     

    Add egg and milk into bowl mix for 5 seconds on speed 4.

     

    Add flour, honey and brown sugar to TM bowl and mix for 10 seconds on speed 4.  Scrape down sides.

     

    Add blueberries to TM bowl and combine for 5 seconds, reverse on speed 3.

     

    Put mixture into muffin patties and bake at 200C for 15 minutes.

Tip

These muffins freeze well

    These muffins are fabulous! I used half the sugar and frozen raspberries and they were certainly sweet enough. Next time I will try fresh blueberries.

    Delicious! I used GF flour + baking powder, half maple syrup and half rapadura sugar. Nice and light and fluffy Love also used a whole punnet of fresh blueberries in half of the mixture, chocolate chips in the other, coz you know, fussy family...

    Super easy and I change the fruit to what ever I have in the fridge/freeze. Always deli ions even I cant get these wrong.

    Really good recipe, I used GF flour and they were still good, added a little vanilla essence and a little salt as GF flour tends to be tasteless.
