These were super easy to make and a hit with the friends I shared them with. I used frozen mixed berries instead of blueberries and they made 12 regular sized muffins.

Yummy! I used dried blueberries as I had some I wanted to use up. They would have been better with fresh or frozen but were still delicious. Were quite moist too. Thank you!

  • This recipe was a huge hit
    Submitted by Stephclarked on 29. September 2014 - 18:05.

This recipe was a huge hit with my family. I substituted half of a mashed banana instead of the egg (didn't realise that I didn't have eggs until I started cooking) and reduced the sugar to 70g of coconut sugar instead. Also used fresh blueberries instead of frozen as they were on special. Very moist, tasty and not too sweet.
