Blueberry Muffins

Ingredients

  • Please enter the ingredients in the following order:
  • 90 g Butter
  • 1 x egg
  • 180 g Milk
  • 100 g brown sugar
  • 1 tbps honey - heaped
  • 240 gself raising flour
  • 120 gfrozen blueberries
  • 6

Recipe's preparation

  1. Preheat oven to 200C.

     

    Place butter in TM bowl and melt for 1.5 minutes at 60C on speed 3.

     

    Add egg and milk into bowl mix for 5 seconds on speed 4.

     

    Add flour, honey and brown sugar to TM bowl and mix for 10 seconds on speed 4.  Scrape down sides.

     

    Add blueberries to TM bowl and combine for 5 seconds, reverse on speed 3.

     

    Put mixture into muffin patties and bake at 200C for 15 minutes.

    These muffins are fabulous! I used half the sugar and frozen raspberries and they were certainly sweet enough. Next time I will try fresh blueberries.

    Absolutely delicious! I used 65g brown sugar and 1 teaspoon of honey and they were well and truly sweet enough. Cooked for 20 mins at 180 degrees and they are super moist.

    Love with these muffins! the mixture made 12 muffins, i lowered the oven temperature slightly and cooked them a few minutes longer than recommended. Delicious muffins, not too sweet. I substituted the sugar with coconut sugar, used maple syrup instead of honey and I used fresh blueberries.

    This recipe was a huge hit with my family. I substituted half of a mashed banana instead of the egg (didn't realise that I didn't have eggs until I started cooking) and reduced the sugar to 70g of coconut sugar instead. Also used fresh blueberries instead of frozen as they were on special. Very moist, tasty and not too sweet.

    I'm sorry these didn't work for you, I have made every time and always pereflect along with the rest of the comments.. If too sweet cut sugar back a little or try using rapadura.

    These were a disaster!! I don't know what I did but they didn't cook at all.  My 6 year old tried one anyway and couldn't finish it as she said it was too sweet. What a waste of an $8 punnet of blueberries!!

    I made this into mini muffins, cooked for 12 minutes at 180'c, mixture have me 36 mini muffins.

    Halved sugar and used pure maple syrup instead of honey - still delicious!
