Boiled Pineapple Fruit Cake

Ingredients

  • 1 x440 g tin crushed pineapple
  • 500 gmixed fruit
  • 120 g Butter
  • 190 g sugar
  • 1 tsp mixed spice
  • 1 tsp bicarb soda
  • 140 g plain flour
  • 140 gself raising flour
  • 2 eggs
  • 6

Recipe's preparation

  1. Preheat oven to 150°C. 

    Place pineapple, fruit, butter, sugar, mixed spice and bicarb soda into TM bowl and cook for 10 minutes at 100°C on speed 1 on reverse. 

    Allow to cool. 

    Add remaining ingredients and combine for 10 seconds on speed 4 on reverse.

    Pour mixture into a lined square cake tin and bake for 1.5hours at 150°C, then reduce to 120°C for 30 minutes.

Tip

Cake should be moist – cooking time or temp may need to be reduced if browns too quickly

    This is the best fruit cake recipe. I have made it time and time again for some years. I also make it as gifts for people and always get raving reviews and thanks. I add a packet of glacie cherries and about 100gm of walnuts or other nuts that I have on hand. The more fruit the better.

    Thanks you so much for converting this old school recipe, no more saucepan, boil etc. I have always cooked in 20 cm tin lined with cardboard on the inside to slow the cooking, and only cook conventional bake (no fan) 150 Degrees, ice with brandy butter from the thermo recipe community for an awesome Christmas Cake.👌

    I used a 24cm square tin and reduced time as it was a fairly thin cake in this size tin. I’d suggest 20-22cm would be ideal. I’d also recommend slightly lower temps for a fan forced oven.
