  • 100 grams Butter, soft, or margarine
  • 200 grams raw sugar
  • 1 egg
  • 1/2 teaspoon vanilla essence
  • 1 tablespoon water
  • 1/2 teaspoon baking soda
  • 150 grams dates, chopped in thermomix
  • 150 grams self-raising flour
  • 100 grams rolled oats
  • 30 grams Cornflakes
  • 50 grams Coconut

Recipe's preparation

    Bushwalker Cookies
  1. Method

    1.   Preheat oven to 140°C and line or grease baking trays.

    2.   Chop dates by putting into TM bowl, setting dial to closed lid position and pressing turbo approximately 6 times, until chopped.  Set aside.

    3.   Beat butter and sugar together for 30 seconds on speed 4.  Scrape down sides.

    4.   Add egg, vanilla essence, water and baking soda.  Mix for 30 seconds on speed 4.

    5.   Add remaining ingredients and set dial to closed lid position, mix 30 seconds on interval speed.

    6.   Roll into balls and flatten onto baking tray.

    7.  Bake for 20-25 minutes until crisp around the edges.

Tip

Add any desired nuts or dried fruits to the mixture such as sunflower seeds, dried apricots, preserved citrus peels or sesame seeds.  Preserved ginger is tasty and 1 tablespoon of honey added along with an extra cup of rolled oats is an interesting variation.

    Loved these cookies, halved sugar. Used half wholemeal SR Flour and half white SR Flour. Used Uncle Toby cereal instead of cornflakes and added some muesli as well. Baked in my Weber BBQ as I currently don't have an oven.

    You could easily halve the sugar and it wouldn't affect the taste.
    A great filling cookie!
    Might try with dried apricots next time...

    Simple and delicious. I also halved the sugar and they were fine. For my own reference, make largish balls of dough as they don't rise very much. Our family likes large biscuits.  Love Thanks for sharing a great recipe.  Cooking 7

    AMAZING!! This recipe is so user friendly. Ive only had my thermomix for a couple of days and this is by far my favourite recipe. I could easily follow this recipe and best of all the end product taste absolutley amazing!     These were really great. Loved the crunch and they were a hit with the kids. I also reduced sugar. Will try adding bits and pieces next time, to change them up but they will be a regular in this household tmrc_emoticons.-)

    These are really yum!  We halved the sugar and used rapadura, and omitted the dates as my kids don't like them.  Really tasty, sweet enough and a great lunchbox snack.  I think next time I might try them with honey and no sugar.  Thanks!  

     

    I just thought I'd update that I made them with no sugar and about 60g of honey instead and they were great.  tmrc_emoticons.-)

    No problem - glad you love them and are creating your own variations.  A girlfriend's daughter cannot eat egg so we substituted egg for some golden syrup and they were a delicious treat the whole family could enjoy!
