Capri Choclate Cake (gluten free)

Capri cake

  • 175 g Choclate, Any plain choclate
  • 4 eggs, Seperated
  • 150 g caster suger
  • 1 tsp vanilla essence
  • 125 g almond meal
  • cocoa powder, For Dusting
  • 175 g Butter, Melted
  • 150 - 200 g Mixed Berries or cherries, Frozen or fresh

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Capri Cake
  1. 1) Preheat oven 180 degrees C. Grease sides of a 23cm spring form cake tin and line bottom with baking paper.

    2) Chop 175g choclate - 7 seconds, speed 5. Set aside. Clean and dry bowl

    3) Insert butterfly whisk. Place 4 egg whites in bowl. Wisk 4minutes on speed 3.5 - until stiff peaks form.  Set aside

    4)Place egg yolks and caster sugar in bowl. With butterfly wisk, wisk for 1minute on speed 4. Scrape down sides

    5) Add vanilla essence, almond meal, melted butter and chopped choclate, stir 10 seconds on reverse, speed "spoon".  Scrape down sides of the bowl. If necesary, repeat this step.

    6) Fold in egg whites

    7) Spoon batter into prepared cake tin, bake for 50-60 minute, or until just firm to the touch.  Leave to cool before turning out
