Base

  • 120 grams Butter, softened
  • 150 grams self-raising flour
  • 50 grams brown sugar
  • 50 grams dessicated coconut

Caramel Filling

  • 160 grams water
  • 200 grams brown sugar
  • 200 grams milk powder, full cream
  • 240 grams Butter, softened
  • 125 grams golden syrup

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    To make base
  1. Line a rectangular pan with baking paper, preheat fan-forced oven to 180°C.
  2. Add butter. Select warm up mode, set to 50°C.
  3. Once butter is melted, add flour, sugar and coconut. Mix for 10 seconds/reverse/speed 3. Scrape sides, then repeat if necessary.
  4. Press into prepared slice tray and bake for 10-12 minutes or until lightly golden.
  5. To make caramel filling
  6. Add water, brown sugar, milk powder, butter & golden syrup into the Thermomix bowl. Cook 22 minutes/90°C/Speed 4.
  7. While still hot, pour over base and smooth over. Bake in oven for 15 minutes at 180°C or until bubbly and browned.
  8. Chocolate Topping
  9. While slice is still hot, dot top with chocolate melts, up to 200g to taste. Once the chocolate starts to melt, spread it evenly over the top of the slice and leave to cool. Cut into pieces and store in refridgerator.
