  • 1 green apple
  • 240g Almonds raw
  • 60g Tapioca/arrowroot flour
  • 1 level tablespoon Coconut Flour
  • 1 level tablespoon baking powder GF
  • 1/4 teaspoon Himalayan salt
  • 1 teaspoon Vanilla Paste
  • 1/2 teaspoon ground nutmeg

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Grate carrots and apple and place in separate bowl.

    Place all dry ingredients into Thmx bowl and ground speed 10 for 30 seconds.

    Add all wet ingredients to dry ingredients, add grated carrot and apple.  Blend speed 7 for 25 seconds, till a smooth consistency.

    Grease muffin tray, or line with paper cups.  Place in fan forced oven on 170C for approx 25 minutes until they are firm to touch.  Leave to cool in tray for 10 minutes then transfer to a wire rack.

    This is a Pete Evans recipe from Family Food.  I have added coconut flour for a thicker consistency.

    Really yummy, I think if the heading was to say GF and sugar free(processed) I'm sure more would try this recipe. I accidentally put too much milk in my mix (25gms) so I added and extra tablespoon of coconut flour and a little less coconut oil by about 20gms. Mine needed just a little longer in the oven. I got about 13 muffins out of my batch. I found some of the speeds and length of time mixing was a bit high and long with the instructions and obviously I grated the carrot and apple in the thermomix although maybe the instructions should be cleared  for someone who might be new to using the machine. I was asked for the recipe so I'm going to have to pass it on and convert for a non thermo user. All in all great muffins
