  • 55 g Virgin coconut oil
  • 15 g chia seeds
  • 180 g pitted dates or prunes
  • 55 g Almond milk
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon almond essence, optional
  • 140 g rolled oats
  • 85 g Whole Wheat Flour
  • 50 g chopped nuts of your choice
  • 90 g dark chocolate chips or buttons
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking soda

Recipe's preparation

  1. Preheat oven to 180 C

     

    Into bowl combine:

    Oats, flour, nuts, baking soda and salt

    mix on speed 4 for 6 secs to combine and set aside

     

    Mill chia seeds  10 secs speed 10

    Add  coconut oil and warm for 2 mins  60 degrees speed 2 until melted.

    Add dates, milk, vanilla  and almond extract.

    Use turbo button to form a paste scraping down sides of bowl to combine as needed.

     

    Add dry ingredients and chocolate and set dial to closed lid position  on interval setting and knead for 30 secs or till just combined. 

     

    Spread onto a baking tray lined with baking paper forming a rectangle Cut into bars prior to baking cook till golden brown and set to touch  12 to 15 mins

    These are fanastic, my one year old loves them.  I didn't have any chocolate chips so didn't add them and I subsituted almond milk for macadamia milk.  Super easy!

    Yummy, I agree more like a slice than a bar. Next time I will reduce the dates. I only had block of milk chocolate. I think dark chocolate drops would be better.

    So yummy. Mine didn't turn out hard like a bar though. Not sure if they were meant to? They were more of a slice. Delicious either way. I didn't actually make them for us, I made them for my Dad but husband has just told me I now need to make a batch for us.

    Tastes great. I have made twice and both times I only added 1/3 of the dates and 1/2 the choc chips and w still sweet enough and delicious.  The second time I doubled the recipe and apart from needing more time to mix at the end worked well.  I also used spelt flour and the first time used cashews and the second time used walnuts and sun flower seeds.  Many thanks!!

    Wow! This was so yummy, thanks susieq, I used wholemeal spelt flour, pecan nuts (macadamias would be good too), and had no almond essence so used a good slug of amaretti liquer...kapow!...
