Choc chip and macadamia cookies

  • 30 g macadamia nuts
  • 130 g Butter
  • 100 g Coconut sugar
  • 1 egg
  • 2 teaspoons vanilla essence
  • 180 g Gluten free plain flour
  • 1/2 teaspoons bicarbonate of soda
  • 1/2 teaspoons baking powder
  • 1 pinches salt
  • 130 g dark chocolate chips

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 degrees c and line 2 baking trays with baking paper
  2. Place macadamia nuts in mixer bowl, chop 2 sec/speed5/MC on. Set aside
  3. Add butter, cocnut suger, egg and vanilla to mixer bowl and blend for 2mins/speed 3/MC on
  4. Add flour, bicarb soda, baking powder and salt and blend for 30 sec/speed 4/MC on
  5. Add mini choc chips and reserved chopped macadamia nuts and combine for 30 sec/speed2/MC on
  6. Spoon teaspoon sized balls onto baking paper, ensuring to leave around 4cm between each bakk and bake for 10mins or until golden brown on top.
  7. Allow to cool before serving
