Choc meringue cupcakes

Ingredients

Cupcakes

  • 200 g sugar, (1 cup)
  • 1 egg
  • 140 g buttermilk, (1/2 cup)
  • 100 g oil, (1/2 cup)
  • 1/2 teaspoon salt
  • 1 tsp baking powder
  • 360 g plain flour, (1 cup)
  • 20 g Dutch processed cocoa, (1/4 cup)
  • 1 tsp vanilla
  • 120 g Boiling water, (1/2 cup)

Meringue

  • 4 egg whites
  • 200 g sugar, (1 cup)

Recipe's preparation

    Cupcakes
  1. Preheat oven to 170 degrees C.  Line cupcake pans with papers.

    Mix the sugar, egg, buttermilk, oil, salt, baking powder, flour, cocoa and vanilla 10 seconds speed 5.  Scrape down sides of bowl.

  2. Add in boiling water and mix a further 20 seconds speed 5.

    Pour batter evenly into paper cases and bake 25 minutes until cooked through.

  3. Cool completely on wire rack before preparing meringue icing

  4. Meringue
  5. Mill sugar for meringue 10 seconds speed 9.

  6. Fit butterfly to bowl and add egg whites.

  7. Whip 5 minutes 60 degrees speed 4, then beat again for 5 minutes, speed 4 but with no temperature selected

  8. Place meringue into a piping bag and pipe onto top of cooled cupcakes
