Very nice! Like the nutmeg in the flavour. Kids knew something was up immediately but gobbled them up anyway. Made as per recipe but with GF flour

These are great, haven't made them with buttermilk yet but I'm sure that it would make them even better. I keep a few in the freezer for when I need a sweet fix.

Thanks for sharing! So easy to make and tasty.

My 2.5 year old keeps asking for more, and she is a fussy eater! Winning! Great way to hide the veggie!

I reduced the sugar to 100g and used a mix of self raising flour and wholemeal self raising flour.

I might leave out the nutmeg next time as I'm not really a fan.

I made them into mini muffins and cooked for about 12 mins.

These were easy to make, tasted great and a hit all round. Will def make again. Adding half a banana to make up for not enough zucchini was a good suggestion. Thank you for sharing.

  • Great recipe. I love using

Submitted by van der Ploeg on 14. February 2016 - 12:03.

Great recipe. I love using hidden veggies in sweet recipes. I did find that my muffins went a wonkey shape if I put too much mixture into my moulds. They don't rise very much so best to fill up the moulds only half way. Thanks for sharing.

    Submitted by JENNIGRANDMA on 7. September 2015 - 13:03.

Great hideaway for vegetables. My grandchildren had them for dessert with ice cream.  They thought they were fantastic. Then my daughter said 'Mum do these have zucchini in them? You should have heard the yells, but they still said they were great. Many thanks.
