- 300 g zucchini, chopped roughly
- 100 g Butter
- 150 g Rapadura Sugar, or raw sugar
- 3 eggs
- 250 g self-raising flour
- 20 g cocoa powder
- 1/2 tsp cinnamon
- 1/2 tsp Nutmeg
- pinch salt
- 100 g buttermilk, or plain milk

Recipe's preparation
1. Preheat oven to 180deg
2. Add zucchini to TM and grate - 3 sec/speed 5. Scrape and repeat. Set aside, DON'T clean bowl
3. Add butter and sugar to bowl and cream - 20 sec/speed 4. Scrape and repeat
4. Add remaining ingredients (including reserved zucchini) and mix - 15 sec/speed 4. Hand stir any ingredients that may not have mixed in properly
5. Spoon into cupcake moulds and bake for 15 min or until firm to touch

Tip
Deliciously moist on their own, but feel free to add a little icing and spinkles to 'party them up'!
Icing - 150g icing sugar, tiny splash of milk, few drops of food colouring and mix - 30 sec/speed 3-4. Repeat if needed.

I reduced the sugar to 100g and used a mix of self raising flour and wholemeal self raising flour.
I might leave out the nutmeg next time as I'm not really a fan.
I made them into mini muffins and cooked for about 12 mins.

Great recipe. I love using hidden veggies in sweet recipes. I did find that my muffins went a wonkey shape if I put too much mixture into my moulds. They don't rise very much so best to fill up the moulds only half way. Thanks for sharing.
