Chocolate Walnut Banana Cake

  • 3 ripe bananas
  • 150 grams caster sugar
  • 150 grams unsalted butter
  • 2 eggs
  • 240 grams flour, self-raising
  • 1 level teaspoons Bi Carbonate of Soda
  • 100 grams Dark cooking chocolate
  • 100 grams raw walnuts
  • 40 grams Milk

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Preheat oven to 160 C
    2. Mill raw sugar 5 seconds on speed 9. Set aside.
    3. Finely chop chocolate 10 seconds on speed 9. Set aside with sugar.
    4. Place bananas in the bowl and mix for 5 seconds on speed 4. Set aside.
    5. No need to rinse out bowl. Add butter, milled sugar and finely chopped chocolate to bowl and mix for 2 minutes on speed 3 till light and creamy.
    6. Add 1st egg and continue to mix for 1min at speed 3
    7. Add 2nd egg and mix for 30sec at speed 3.
    8. Add the banana mixture and mix for 5 seconds on speed 5.
    6. Add the flour, bicarbonate of soda, nuts and milk and mix
    for 15 seconds Counter-clockwise operation on speed 4
    7. Pour into a lined ring or bundt cake tin and bake for 40 minutes. If cake still looks wet after this time reduce the temperature to 140 C and cook for a further 10 mins
    8. Wait 10 minutes before turning out of the cake tin.

Tip

All ingredients should be room temperature.

Allow more cooking time if you don’t use a ring or bundt baking tin.
