Ingredients

24 piece(s)

  • 230 grams SR flour
  • 115 grams Butter
  • 115 grams raw sugar
  • 50 grams Currents
  • 50 grams sultanas
  • 1 egg
  • 2 tablespoons Milk

Recipe's preparation

  1. Preheat oven to 160-180oC

    Mill raw sugar for 5 secs SP 9

    Add flour to milled sugar in TM bowl and mix 2 seconds Speed 6

    Add butter and mix 8 seconds Speed 6

    Add egg, fruit & milk. Set to closed lid position and combine on Interval speed for 40 seconds.

    Using about a dessert spoon amount of dough, roll mixture into small balls, and flatten slightly

    Place on tray lined with baking paper. Bake until light brown (approx. 12-15 minutes)

Tip

You could substitute mixed dried fruit or nuts to suit your taste!

    Delish! A batch of yummy biscuits whipped up in no time. I used mixed dried fruit as my children love the cherries. I cooked mine at 160 fan bake for 12 minutes. Perfect! Will be making these regularly for the lunch boxes.  Cooking 7 Cooking 7

    These are lightest rock cakes I've ever made. The recipe doesn't state when to add the milk, so I added it with the egg & fruit. Makes a decent size batch. Thanks for sharing
