  • 190 grams plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 100 grams almonds
  • 220 grams pitted dates
  • 140 grams raw sugar
  • 2 eggs
  • 120 grams extra light olive oil
  • 310 grams ripe bananas, (about 3 large bananas sliced into bowl)
  • 1.5 tsp vanilla extract or 1 tsp vanilla bean paste
  • 2 tsp cinnamon ground

Recipe's preparation

  1. Preheat oven to 180 degrees C. Butter or line a large loaf pan (about 23 x 13 x 16 cm). Set aside.

  2. Put flour, bicarb soda, cinnamon and salt into TM bowl and sift for 5 seconds on speed 5. Add dates, chop for 10  seconds on speed 7. Add almonds and chop for 10 seconds on speed 5.  Remove flour mixture to separate mixing bowl. I have two TM bowls so I left mixture in here and used other for next stage.

  3. Put sugar in bowl and mill for 3 seconds on speed 10. Add eggs   and oil, and mix for 40 seconds on speed 6 until light and creamy. Slice banana into  bowl and add vanilla and mash for 3 seconds on speed 6.

  4. Pour the batter mixture into the flour mixture and put on reverse speed 5 for 40 seconds or until completely combined.

  5. Bake for about 1 hour in a moderate oven or until the top is springy and a   fine skewer inserted in the centre comes out clean.  Cool the loaf in the tin on a wire rack for 10 minutes, before turning our onto the rack to cool.

  6. It keeps well in the fridge for about 5 days, and can be frozen for up to 2   months.

Tip

  It freezes very well, and may be sliced, and placed between freezer sheets and frozen for later.

If you want to be able to send this loaf to school in the lunchbox, either remove the nuts and/or replace them with pepitas or sunflower seeds. My kids are happier without them.

    Lovely. I substitute a mixture of pepitas, sunflower & linseeds for the nuts to make it school-friendly. I also used wholemeal flour (didn't bother with the sifting step, just went straight onto adding the dates), grape seed oil instead of olive and reduced the sugar to 100g, using half raw & half brown sugar. Delicious! 2 of my kids are OK with the crunchy pieces of seeds, but one prefers that I add the seeds with the dates & crush them up a bit more.

    I added 60g of shredded coconut and 150g of walnuts during step 4 and also covered the top in the same shredded coconut just before putting the tin in the oven.

    Absolutely delicious cake!!!!! Making another for a friend now!!!

    Absolutely Delicious! Everyone asked for the recipe. I used a medium sized loaf tin and also made some muffins with the extra mixture which were so yummy!  Unfortunately there is none left so I'll have to make another lot!

    So yummy! I milled oats instead of plain flour, a little bit of coconut sugar instead of raw sugar and I put it into silicone cupcake moulds instead of a loaf pan. So good!

    Thumbs up here, thank you! I used raisins instead of dates and walnuts instead of almonds. And I split it into 2 loaf tins and cooked for about 40min which was great timing... 

    I think the process is perfect - sifting flour like that seems to work a treat!!
