Coconut Chocolate Brownie

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Coconut Chocolate Slice
  1. Preheat fan oven to 160 degrees Celsius. Line a square tin with baking paper.
  2. Add butter to bowl 4mins/100degrees/speed 1.
  3. Add sugar, egg and vanilla. Mix 20sec/speed 5. Scrape down sides of bowl.
  4. Add plain flour, self-raising flour, cocoa and coconut and mix 20 secs/speed 2. Scrape down sides and bowl and mix 20sec/speed 2.
  5. Use spatula to spread evenly in pan and bake for 25mins.
  6. Allow to cool completely. Dust with icing sugar and slice in 16 or 24 portions.

Tip

Instead of dusting with icing sugar, prepare a simple chocolate icing and spread on top. Sprinkle with additional coconut.

Serve with cream and berries for a simple dessert.
