Lemon Curd

  • 120 g freshly squeezed lemon juice
  • 120 g Butter
  • 200 g sugar
  • 2 eggs

Base

  • 300 g SR flour
  • 120 g Butter
  • 200 g sugar
  • 2 heaped tablespoons custard powder
  • 2 eggs

Topping - add to 1/2 Base Mix

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Lemon curd - do ahead and cool for thick consistency
  1. Place all ingredients into TM Bowl Closed lid
    Cook 100/10min/Sp4 or use thicken mode
    Pour out to another bowl to cool. Set aside
  2. Base for Slice
  3. Preheat Oven 180, grease and line 20x30cm Lamington tin
    Place all ingredients into TM BowlClosed lid
    Beat 30s/Sp5, scrape down the sides and repeat
    Divide base mix leaving 1/2 mix for topping-set aside
    Other 1/2 -Spread evenly over base of tin(using wet fingers)
    BAKE for 15 to 20 min till firm to touch. Set aside to COOL

  5. Place remaing 1/2 of mix into TM BowlClosed lid
    ADD in shredded coconut and mix on reverseCounter-clockwise operation for 30s/Sp4
    Proceed to next step
  6. Constructing Slice
  7. When Lemon curd has set and Base has cooled
    Pour all the Lemon curd over the cooked Base
    Then use a spoon to dollop Topping Mix as even as possible on top of the lemon curd.
    Return to oven and Bake for 30 to 45 min or until golden on top.
    Enjoy warm as a dessert or cold as a slice!

Tip

Between making Curd and preparing base, no need to wash TM BowlClosed lid
Keep fingers wet to spread base into tin

    Added zest of lemon to sugar and milled in for extra "zing" in the curd Subbed Custard Powder w 20g cornflour/1tspVanila Paste. NB half mix is 380g for base and 180g = 2 cups coconut. Made x2 loaf pans. Mixed topping less and "crumbled it over"
