Ingredients

VANILLA CUSTARD SLICE

  • 2 sheets Puff pastry
  • 600 g Milk, or 600mls of milk
  • 300 g pure whipping cream
  • 100 g raw sugar
  • 90 g cornflour
  • 50 g Butter
  • 25 g vanilla extract
  • 4 egg yolks
  • 2 whole eggs
  • 1/2 pinches salt

VANILLA ICING

  • 230 g pure icing sugar
  • 30 g Milk
  • 1 level teaspoon vanilla extract

Recipe's preparation

    VANILLA SLICE
  1. 1. Pre heat oven to 200C fan forced. Line two trays with baking paper.Lay a sheet of pastry on each tray. Top each with a second piece of baking paper, then place a second tray on top of each. Bake for 15 - 20 minutes, until golden brown. Remove from the oven. Remove top trays and top sheets of baking paper. Allow pastry to cool.

    2. To make the custard, place 600g or 600ml milk, cream, sugar, cornflour, butter, vanilla,2 whole eggs and 4 egg yolks and salt in mixer bowl. Cook 10min/90/speed4.

    3.Line a 22cm square tin or container with baking paper, allowing paper to overhang the sides. Use a sharp knive to trim one sheet of pastry to fit snuggly inside the container..

    4.Pour custard onto the pastry. Smooth out with a spatula. Trim the second sheet of pastry to fit on top, then set in place and gently press down. Refridgerate uncovered for 4 hours or overnight, until completely cold and set. At any stage once the custard is cool, you can ice the top of the slice.

    5. ICING - place 20g icing sugar, 30g milk and tsp vanilla extract, in mixing bowl. Mix 20 sec/speed3. Scrape down bowl. Repeat. The consistency should be thick but spreadable. If needed add a small amount of icing sugar or a dash of milk.

    6.Spread icing over the top sheet of pastry. Set in the fridge for at least an hour.

    7. Holding overhanging baking paper, carefully lift the slice out of the container. Use a sharp serrated knife to cut into slices.

Tip

Dairy free/egg free/vegan: Omit butter and eggs. For the custard, replace milk and cream with 900g plant based spread. Increase cornflour to 120g. Optionally, you can also add a pinch of tumeric - you wont taste it, but it will ensure a better colour custard. For the icing use a plant based milk.


Gluten free: use gluten free puff pastry. Ensure you follow the instructions on the packaging for rolling out if applicable.
