Ingredients

Topping

  • 180 g plain flour
  • 70 g brown sugar
  • 2 tsp cinnamon
  • 125 g Butter

Base

  • 70 g raw sugar
  • 125 g Butter
  • 150 g plain flour
  • 50 g self-rasing flour

Filling

  • 50 g walnuts, (optional)
  • 1 can condensed milk
  • 30 g Butter
  • 60 g golden syrup
  • 3 tsp instant coffee
  • 6

Recipe's preparation

    Topping
  1. Place plain flour, brown sugar and cinnamon into mixing bowl and mix 3sec/speed 3.

    Add butter and mix 10sec/speed 8 or until it comes together.

    Tip into a bowl and using your hands squeeze together to form a ball. Wrap in Cling wrap and place in fridge for 40-60min or until firm (can place in freezer, just remember to pull it out before it's frozen!)

  2. Base
  3. Mill the raw sugar 2sec/speed 9.

    Add the butter and cream together 15sec/speed 4.

    Add in flours, mix 10sec/speed 3. Scrape down sides and mix again 15sec/speed 4 or until all flour is combined.

    Press into a lined slice tray, using base of MC to smooth over, and bake in moderate 180c oven for approx 10min, or until golden brown.

    Wash and dry bowl.

  4. Filling
  5. While base is cooking,

    Chop walnuts, if using them, 2sec/speed 7 or until desired size. Set aside.

    Place butter, condensed milk, golden syrup and coffee into mixing bowl. Cook 10min/90c/speed 3.

     

    If using walnuts, sprinkle them over the base and pour filling over them and leave to cool slightly.

     

    If not using Walnuts, Pour filling mixture over the base and leave to cool slightly.

     

    Wash and Dry bowl.

  6. Final Step!
  7. Once filling has slightly cooled, and the topping is firm in the fridge.

     

    Remove topping from fridge and break in half. Place into Mixing bowl and grate 1sec/speed 9.

    Sprinkle evenly over the filling and put back into moderate 180c oven for 10-15min or slightly golden on top.

     

    Leave to cool completely (in fridge is fine) before cutting.

Tip

For the Non Coffee lovers, you can replace the instant coffee in the filling for 3 tsp of Cocoa to give a chocolately flavour.

 

Keep in the fridge for up to 5 days. Can also be frozen for use later on.
