Dark Chocolate Sour Cherry Brownie

Ingredients

Brownie

  • 100 grams dried sour cherries
  • 220 grams raw sugar
  • 220 grams dark chocolate, broken into pieces
  • 200 grams Butter, unsalted
  • 3 eggs
  • 130 grams rye wholemeal flour
  • 20 grams raw cacao powder
  • 5 grams instant coffee granules
  • 100 grams White Chocolate Chips
  • 80 grams walnuts

Recipe's preparation

    Brownie
  1. Pre-heat oven to 160 degrees celcius (fan-forced) and line a 20 x 30 cm tin with baking paper.


     


    Place cherries in a heatproof bowl and add enough boiling water to just cover.  Allow to sit 30 minutes

  2. Add sugar to mixing bowl and mill 2 sec/speed 9.  Set aside

  3. Add chocolate and butter to mixing bowl and melt 5 min/60 deg/speed 2.


     

  4. Add sugar and eggs to mixing bowl and mix 10 sec/speed 5.  Add remaining ingredients (including drained cherries) and mix 20 sec/counter-clockwise operation/speed 5 or until mixed through.  Scrape down sides of mixing bowl with spatula and mix again if required.

  5. Pour into tin, smooth top with spatula and bake for 40 mins.  If browning to quickly, cover with foil towards end of baking time.  Ready when a knife inserted comes out clean or with loose crumbs.  Cut into 18 portions once cooled.

You could also try this with dried blueberries or cranberries instead.
