Ingredients

Muffin Mix

  • 200 grams plain flour
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon Nutmeg
  • 1/4 teaspoon cinnamon
  • 160 grams sugar
  • 65 grams oil
  • 1 egg
  • 240 grams Milk

Topping

  • 1/2 Cup of Sugar
  • 1/2 teaspoon cinnamon
  • 100 grams melted butter
  • 6

Recipe's preparation

    Muffins
  1. Add flour, baking powder, salt, nutmeg, cinnamon and sugar to TM Bowl.  Turbo a couple of times to combine.  Set aside in separate bowl.

    Add oil, egg and milk to TM Bowl.  Mix for 5 seconds on Speed 5.  Add dry ingredients to wet mixture in TM Bowl.  Mix for 5 seconds on Speed 5 to combine.

    Pour into Muffin Trays (using patty pans) and bake at 180 degrees for 20-25 minutes.

    While muffins are hot, dip into butter, then dip into cinnamon sugar mixture.

  2. Topping
  3. Combine sugar and cinnamon in small bowl/ramekin.

    Melt butter (I did mine in the microwave).

    When muffins are removed from oven and hot, dip each one in butter, then cinnamon sugar mixutre.

    Finally I got to make this recipe. I was pleased to read comments about success substituting gluten free flour. I just swapped with White Wings brand (no additives) and it was a hit with everyone, especially my coeliac wife. I used about 30g butter melted in microwave, brushed the tops of muffins, then dipped into half recipe quantity of caster sugar and same amount of cinnamon. Quick and easy to make and highly recommended.

    These are delicious but make more than 8 serves. I overflowed 12 muffin pans. Next time I will use patty pans as they stuck to my silicon tray, and put the silicon on an oven tray as they are very watery before baking and hard to move. I will also only 3/4 fill the patty pans. They are definitely worth trying again!

    Cpatch: I've made them in a Tupperware silicone muffin tray without patty pan liners and they worked out ok, but not in a greased muffin tray. They are quite light and fluffy , so I think you'd want to grease the pan well if you did try.

    OMG! Thank you! I took the opportunity to try the bobs red mill 1 to 1 gluten free flour and they worked out amazingly. I read comments where people have used other brands of gf flour with success so I figured I'd try other brands too since they come on special more frequently than bobs red mill. I will get around to making my own flour, but until then, I'll just have to try and retry different flour blends with this recipe...😛 I'm also going to try cooking it in the doughnut maker I was given.

    I use a mild olive oil but you could use any oil which doesn't have too strong a taste

    these were super easy and tasted just like a doughnut! Great for the kids who always want the deep fried version but never get it. Cut the sugar to 100 grams and still tasted great.
