Dutch Spice Biscuits

  • 250 g Butter, cut into 2cm cubes
  • 275 g brown sugar
  • 3 tbsp brandy or rum
  • 1 tbsp cinnamon
  • 1 tsp Nutmeg
  • 1 tsp cloves
  • 1/2 tsp aniseed
  • 1/2 tsp salt
  • 1/2 tsp ginger or white pepper
  • 360 g Gluten free plain flour
  • 4 tsp Gluten Free Baking Powder

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Pre heat oven to 190 C
    Line biscuit trays with baking paper

    Add the sugar and butter to the mixing bowl and cream 30 sec/speed 6[/b]

    Mix in the brandy or rum and spices 10 sec/speed 3[/b]

    Add the baking powder and flour 30 sec/speed 6[/b]

    Take large teaspoons of dough, make into balls and place on tray, leaving room between each to allow for expansion.

    Bake for about 12 minutes or until browned and firm.

Adapted from a recipe of Margret Fulton’s – Speculaas.

They keep really well, though tend to get eaten before they have a chance to prove this.

The mixture is quite large so you can put half of the uncooked mix into the freezer for another day.

If you like almonds, place a blanched almond on each biscuit prior to baking.
