Easiest Almond Chocolate Chip Cookies GF DF - ThermInspiration

Cookie dough

  • 150 grams almonds, raw
  • 40 grams coconut oil
  • 40 grams honey
  • 1/2 tsp Vanilla Bean Paste
  • 50 grams good quality dark chocolate chips (85%)

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. If your chocolate is in a block, mill chocolate first. Place chocolate into bowl, mill for 3 Seconds/ Speed 7. Set aside.

  2. Add almonds to bowl, mill 10 Seconds, Speed 9. Scrape down sides of bowl.

  3. Add oil, honey & vanilla bean paste to bowl. Mix for 5 Seconds/ Speed 3.Carefully splash a dash of water into bowl (Will approx be 5-10g of water) and mix again for 5 Seconds/ Speed 3.

  4. Add chocolate to bowl, combine for 5 Seconds/ Speed 1/

  5. Form dough into 12 cookies, and press onto a baking tray lined with baking paper. Bake in a low oven, 130-150 degrees for 20-30 minutes, until golden. 

  6. Cool completely before serving.
