For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat Oven to 180 degrees fan forced.
Add milk, bananas, oil and eggs to mixer bowl and combine on speed 5 for 10 seconds.
  2. Scrape down sides and then add sugar and flour and mix on speed 5 for 10 seconds, continue for another 10 seconds if required.
  3. Add chocolate chips and mix for 10 seconds , reverse, speed 2.
  4. Pour Mixture into muffin cups ( I usually get around 12- 18 per batch from this recipe).

Bake for 12 -15 mins. ( I don't let them get too brown otherwise they can become too dry)

    Tip:
Use a toothpick to check if cooked - if it comes out clean then they are ready to enjoy !

Tip

These muffins are delicous fresh or can be frozen for 2-3 months- my kids love heating these up for a quick dessert or packing them for school lunches.
