Easy peasy 2 minute Blueberry Muffins

Ingredients:

  • 90 g Butter, chopped
  • 200 g Milk
  • 1 egg
  • 100 g sugar, of choice
  • 230 g self-raising flour
  • 100 g blueberries, fresh or frozen (thaw frozen berries before use)

  • 10 gram Vanilla Bean Paste

Recipe's preparation

    Blueberry Muffins:
  1. Preheat oven to 200 degrees celsius and grease a 12-hole muffin tin or line with muffin papers.

     

    1. Melt butter 2 min/80 deg/speed 2.

     

    2. Add the remaining ingredients to the bowl (except blueberries) and mix for 15 sec/speed 3. Scrape down bowl and mix for a further 5 sec/speed 3. **

     

    3. Add frozen/fresh blueberries and mix for 5 sec/Counter-clockwise operation/speed 3.

     

    4. Divide mixture evenly among the muffin tin.

     

    5. Bake for 15 minutes, until muffins are golden brown and spring back when lightly touched.

     

    6. Cool in tin for 5 minutes before turning out onto a wire rack.

     

    ** you can add 10gm of vanilla bean paste at this point (not included on ingredient list as it's something i only do if I have it on hand) if you like!

    I reduced the sugar to 70g and subbed out the SR Flour for almond meal/wholemeal spelt and a couple of teaspooms of baking powder. Yum.

    I made these tonight for an end of the week Friday treat for my work collegues. Real easy to make and quick! I followed another's advise and used 50g stevia instead of sugar...I can't really say these muffins were bursting with sweeteness. If i make these again, I will tweak the recipe just a little.

    Just a perfect delicious recipe!!!!

    I put mine in for 20 minutes in the oven and then rested for 5 mins in tin before placing on cooling rack.

    Have made these a few times now and always turn out super yummy! I added some choc chips today with the blueberries which was tasty, just need to remember to spray the patty wrappers as hard to get them out whole to eat tmrc_emoticons.)

    Don't be tempted to up the amount of blueberries-I just tried, and it stops the dough mixture for being cohesive and the whole lot falls apart when you try to turn them mout of the tin. FYI best to use patty pan wrappers
