EDC Too Easy Gluten Free Chocolate Cake
- 120 g Butter, cubed
- 2 eggs, room temperature
- 100 g Milk, (I used Almond Cashew Milk)
- 1 tsp vanilla essence
- 120 g sugar
- 120 g Gluten free plain flour, Link to my recipe in tips.
- 1 tsp Gluten Free Baking Powder
- 30 g cocoa
- 1/2 tsp Bi-carb soda

Recipe's preparation
- 1. Pre heat oven to 180 degrees C. Grease a small ring tin.
2. Add 120g cubed butter to "Closed lid" and melt for 2 mins/60/sp 4.
3. Add remaining ingredients and mix fo 20 sec/sp 5.
4. Scrape down and repeat.
5. Pour into prepared tin and bake for around 30 - 35 minutes or until skewer inserted into cake comes out clean.
6. Ice with chocolate icing or ganache when cool or serve warm with cream.

Needing to be GF I have often wondered whether this cake would be OK swapping out the flour for GF - and I see the extra trick is to add some bicarb soda to help with the rise. I have a TM6 so used the guided cooking recipe adding in the bicarb with the flour and baking powder. I only had a 7 inch ring tin but would have had a bigger rise with a 6 inch ring tin. I used Sophia's Kitchen GF blend but will try the Megans recipe next time with the psyllium husk as my crumb was a little crumbly - https://www.recipecommunity.com.au/basics-recipes/megans-gluten-free-flour/1ubxffyx-4dc85-638145-cfcd2-tmy2h07z otherwise the recipe was enjoyed by all.
