EGG & DAIRY FREE MUFFINS

Ingredients

WET INGREDIENTS

  • 80 g castor sugar
  • 250 g Milk, (Soy, Almond, Rice)
  • 60 g canola oil

DRY INGREDIENTS

  • 260 g plain flour
  • 1 1/2 tsp baking soda

  • 200 g mixed berries, (frozen ok)
  • 60-70 g Dark Chocolate (chopped into small pieces), Optional

Recipe's preparation

    Pre heat oven to 180
  1. Describe the preparation steps of your recipe

  2. WET INGREDIENTS
  3. Combine well for 20 seconds, speed 3.

  4. DRY INGREDIENTS
  5. Add all dry ingredients to bowl with wet ingredients and fold through (don't over mix) for 1 min, reverse, speed 1.5.

  6. Fold in berries & chocolate if using, for 30 seconds, reverse, speed 1.5. Check all combined.

  7. Spoon into muffin/cupcake tin and fill to 3/4 full.

  8. Cook for approx 22 mins.

Tip

You can substitute the berries for other fruit and add dark choc chips, or nuts to your liking.

May need to adjust sugar quantity as per taste.

    Quick and easy to make and taste delicious! I used 100gm of chocolate and only 100gm of frozen mixed berries. Turned out perfect!
