Ingredients

  • 275 g ripe bananas
  • 275 g brown sugar
  • 3 eggs
  • Pinch salt
  • 110 g Milk
  • 30 g Espresso coffee
  • 65 g vegetable oil
  • 275 g plain flour
  • 1 teaspoon bicarbonate of soda
  • 11/2 teaspoons baking powder

Recipe's preparation

  1. Preheat oven to 160˚C / 325˚F / gas 3


    Prepare loaf pan 30 x 10 cm / 12 x 3 in Grease & line with baking paper


    Add bananas, brown sugar, eggs, salt, milk, espresso coffee and vegetable oil to the bowl and mix for 3 seconds on speed 5


     


    Insert butterfly


     


    Add flour, bicarbonate of soda and baking powder, mix for 1 minute on speed 4


     


    Pour mixture into prepared loaf pan and bake for approximately two (2) hours or until skewer comes out clean.  Allow to cool slightly in the tin before turning out onto the wire rack.


     


    Serve warm or cold with butter or your favourite jam.
