Feijoa & Lime Loaf

Ingredients

Cake

  • 10 feijoas, whole unpeeled
  • 10 dates, pitted
  • 3 tbsp TM31 tahini
  • 1/2 lime, juiced
  • 2 tsp cinnamon
  • 1+ 3/4 tsp mixed spice
  • 65 grams Coconut Flour, 1/2 cup
  • 1 tsp baking soda
  • 1 egg
  • 1 pinch salt

Recipe's preparation

  1. Soak the dates for an hour or two in water, then drain water off.


    Cut the ends off the whole, unpeeled feijoas.


    Blend feijoas & dates, speed 5 for 1 minute.


    Add the rest of the ingredients, mix for 30 seconds, speed 3 counter-clockwise operation. Scrape down sides & mix for a further 5 seconds.


    Bake in a loaf tin 180oC 1 hr, or 30 mins fan bake at 160oc

Tip

soak the dates overnight if you prefer, or use Mejool dates unsoaked
