Fruit and Nut Cookies (Gluten, Dairy and Refined Sugar Free)

Ingredients

cookies

  • 20 g chia seeds
  • 30 g water
  • 60 g almonds
  • 60 g Cashews
  • 60 g pepitas
  • 30 g Flax seeds
  • 100 g Coconut Syrup
  • 50 g coconut flakes
  • 25 g Coconut Flour
  • 1/4 tsp baking powder
  • 1 vanilla bean, seeds
  • 75 g coconut oil
  • 50 g Goji Berries
  • 50 g sultanas

Recipe's preparation

  1. 1. Preheat oven to 180C 


    2. Place chia seeds into Thermomix bowl and blitz for 10 seconds / speed 10. Add the water, then scrape out into a clean dish and set aside to soak


    3. Add peppitas, almonds and cashews into Thermomix bowl and mix for 6 - 10 seconds / speed 9


    4. Add flax seeds Closed lid turbo / 1 second


    5. Add the coconut syrup, coconut flakes, coconut flour, baking powder, vanilla seeds amd coconut oil. Mix for 10 seconds / speed 5


    6. Add the sultanas and mix for 10 seconds / counter-clockwise operation speed 3


    7. Using wet hands, roll into cookie size balls, and gently flatten, placing on baking paper. Bake for 12 - 15 minutes

    Really lovely, tasty cookies which were easy to make.  I couldn't see from the recipe when to add back the chia seeds or when to add the Goji berries.  I added the Goji berries with the sultanas and didn't set aside the chia seeds and it all worked well.  Thank you for this recipe,
