Fruit Crumble Muffins

  • 75 g Butter, Cubed
  • 170 g SR flour
  • 100 g raw sugar
  • 1 level tbsp water
  • 1/2 tsp vanilla extract


  • 2 green apples, Peeled, cored & quartered
  • 200 g Butter, Cubed
  • 340 g SR flour
  • 200 g raw sugar
  • 60 g Milk
  • 2 tsp vanilla extract
  • 4 eggs
  • Choice of fruit eg strawberries, blueberries, etc, Diced

Recipe's preparation

    Fruit Crumble Muffins
  1. Pre heat oven 160 deg FF.

    Line muffin tin with patty pans.

    Add all crumble ingredients to .

    Turbo/1 sec 3 times until it resembles small crumbs. Empty into another dish and set aside.

    Add apple pieces to and grate 6 secs/sp 4. Empty into a separate dish and set aside.

    Add remaining batter ingredient to the . Mix 15-20 secs/sp 6. Add grated apples to and mix 5 secs/sp 4 (using spatula to help mix apple through).

    Divide mixture evenly between 2 x 12 muffin trays. (I find using an icecream scoop great for this). Top each one with chosen fruit then divide the crumble mixture evenly between the two trays.

    Bake in oven for 25 mins or until golden brown and cooked through.
