  • 150 grams white sugar
  • 50 grams Butter
  • 150 grams pitted dates
  • 150 grams sultanas
  • 320 grams water
  • 20 grams golden syrup
  • 1 tsp mixed spice
  • 1 tsp ginger
  • 1/2 tsp salt
  • 1 tsp baking powder

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Preheat the oven to 170 degrees.
    2. Grease a 23cm x 14cm loaf tin.
    3. Add sugar, butter, dates, sultanas, water and golden syrup to mixing bowl and cook 9 mins/90 degrees/Counter-clockwise operationspeed 1.
    4. Allow to cool for 10 minutes.
    5. Add mixed spice, ginger, vanilla extract, and salt and mix for 5 sec/ Counter-clockwise operationspeed 2.
    6. Add flour and mix for 5 sec/Counter-clockwise operationspeed 3.
    7. Scrape down the sides and add baking powder and baking soda and mix for 5 sec/Counter-clockwise operation speed 3. There may be a small amount of powder still on top of the mixute, just stir this in with your spatular.
    8. Pour into prepared loaf tin and bake for 1 hour or until a skewer inserted in the centre comes out clean.
    9. Allow to cool in tin for 15 minutes before turning out on to a wire rack.

Tip

If there is quite a lot of mixure left in the mixing bowl after you have transfered it into the loaf tin, put the lid back on and turn to speed 10 for 3 seconds. Most of the mixuture will then be thrown up onto the sides for you to remove with the spatular.

    Didn't say how much flour or vanilla was needed. I used 340g Plain Flour and 1tsp of vanilla. I also added some cinnamon and it worked a treat!

    Doesnt say how much flour or vanilla extract to use in the ingredients section! No eggs? I totally guessed , changed and added to this recipe as it just didn't seem right. It's now cooking in the oven. Proof will be in the eating! :/
