Fruity Muesli Fingers

Ingredients

16 piece(s)

  • 190 g rolled oats
  • 1 Pink lady apple, quartered & cored
  • 30 g Butter
  • 35 g flaked coconut
  • 2 tbsp Seeds (ie. Sunflower, Pepitas, Sesame)
  • 2 tbsp brown sugar
  • 200 g Dried Fruit (ie. Sultanas, Cranberries, Plums)
  • 2 eggs
  • pinch salt
  • 55 g honey

Recipe's preparation

    METHOD
  1.  


    1. Preheat oven to 180


    2. Line slice tray with baking paper - set aside


    3. Place apple into TM bowl 3 sec/speed 6, scrape down sides of bowl


    4. Add dried fruit, seeds & coconut 4 sec/speed 9


    5. Add remainder of ingredients counter-clockwise operation/30 secs/speed 5


    6. Sread mixture into lined baking tray, press down firmly


    7. Cook in oven for 15-20mins until golden on top


    8. Allow to cool in tray for 5 mins before removing to wire rack to cool


    Once cooled, cut into small fingers

Tip

Please note: These are perfect for toddlers cooked for 15 mins and easy to chew. If you want a more chunky consistency don't chop for so long in step 4 and also reduce time in step 5.

    Be careful not to overtime in step 4 otherwise u will end up with mush that won't set

    My 2 year old loves these. He calls them 'cake' and can't get enough tmrc_emoticons.)  I love to take them for my morning tea snack at work. Very filling, love it!!
