Fudgy-Wudgy Chocolate Cookies

  • 125 g unsalted butter, Cubed
  • 1 tsp vanilla essence
  • 275 g brown sugar
  • 1 egg
  • 150 g plain flour
  • 35 g Self Raising Flour
  • 1 level tsp bicarbonate soda
  • 35 g cocoa powder
  • 200 g macadamia nuts, Toasted
  • 95 g Milk or Dark Choc Bits
  • 75 g Dark Chocolate Melts, Halved

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place toasted macadamias in bowl and mix for 3- 5 seconds on speed 4 depending how big you want them. Set aside.
  2. Place butter, sugar and vanilla essence in bowl. Cream together for 1 minute Speed 4, scrape down bowl. Mix for 30 seconds speed 4 and add the egg through hole in the lid.
  3. Add flours, bicarb soda and cocoa powder to the bowl. Knead for 30 seconds on interval speed Dough modeuntil all combined.
  4. Add macadamia nuts, choc chips and choc melts to bowl. Mix for 10 seconds on reverse speed 4 until mixed through. These can also be mixed through with a spatula if you prefer larger chunks.
  5. Drop rounded tablespoons onto baking trays lined with paper. Allow about 4cm around each biscuit for spreading. Press each biscuit lightly with a fork to flatten slightly. Bake in a moderate oven 10 minutes. Stand 5 minutes before transferring to a wire rack to cool.

Tip

These can also be made gluten free by using gluten free flour. I used Well and Good Pastry flour for the total flour amount and added 1/2 teaspoon of Baking Powder
