For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipe's preparation
- Pre Heat Oven to 220 Degrees
- Add SRF, butter, sugar 8-10 seconds speed 9
- Add everything else egg, salt, cream and milk
30 sec speed 4.
You want to do this untill everything grabs together and then stop. Normally takes about 30 secs - Flour your bench or Thermomat and gently grab the dough out with your spatular. Use lots of flour at this stage cause it is a bit wet.
- Gently pat the dough to about 2cm thick. Try not to work it too much in this step
- Using a scone cutter cut 10 scones and place on a tray just touching each other
- Bake for 15 mins or until golden brown

Tip
Over working the dough can make these scones very tough. The trick is in the gentle patting and cutting out. No hand kneading required.
