Batter

  • 4 ripe bananas, peeled
  • 80 grams sugar, I use rapadura
  • 150 grams Butter
  • 2 eggs
  • 240 grams GF Self Raising Flour, I use Macro
  • 1/2 teaspoon bicarb
  • 30 grams Milk
  • 1 teaspoon Vanilla essence or extract

Recipe's preparation

    GF Banana Muffins
  1. Preheat oven to 170 C

  2. Place bananas and vanilla into bowl. Mix 4 secs speed 5. Set aside.

  3. Add butter and sugar to bowl. Mix 20 secs speed 5.

  4. Add eggs. Mix 5 secs speed 5.

  5. Return banana mixture to the bowl. Mix 5 secs speed 5.

  6. Add flour, bicarb and milk. Mix 20 secs speed 5.

  7. Pour batter into greased and lined muffin tins or cupcake liners. 

  8. Bake 30 minutes until skewer comes out clean.

    These are really lovely, moist muffins without too much sugar.  You could probably interchange the butter for coconut oil & get a great result, but I followed the recipe.  Thanks for sharing.
