  • 65 g Coconut sugar (or brown sugar)
  • 2 teaspoons cinnamon ground
  • 1 teaspoon nutmeg ground
  • 3/4 teaspoon salt
  • 1 egg
  • 170 grams golden syrup
  • 425 grams spelt flour (or plain flour)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon Bi-carb soda

Recipe's preparation

  1. 1. Add butter and sugar into the bowl. Mix on speed 3 for one minute, then speed 4 for one minute.

    2. Add spices and salt. Mix on speed 2 for 15 seconds.

    3. Turn to speed 3 and add egg through MC hole. Mix for 20 secs.

    4. Add golden syrup. Mix for 1 minute speed 3.

    5. Add flour, baking powder and bi-carb. Mix for 10 seconds, speed 6. Then knead for one minute.

    6.Split into 2 portions, wrap and place in fridge for 45 minutes.

    7. Preheat oven to 170 degrees and line/grease biscuit trays.

    8. Roll dough out to 4mm thickness and cut with cookie cutters.

    9. Bake for 10 minutes.10. Allow to cool before decorating

    Started making these and realised there was no ginger in them! Swapped the cinnamon for 1.5 tbs of ground ginger and just a pinch of nutmeg.

    I used gluten free flour ( receipe from Quirky cooking ), and found l needed a little more, which l added as l rolled out. Taste great, looked great. Will use again.
