I decided to give the Aldi SR flour a go by using the Butter Cake Recipe on the back of the packet and Thermified it. I must say I was pleased with the outcome - the crumb was perfect.

I have also made this cake dairy free using 'Original' nuttelex and rice milk and iced it with vanilla icing using icing sugar, vanilla essence and a little nuttelex - it was devoured by Master 5 (licking plate and asking for more - can't ask for better than that!
