  • 150 grams Butter, cubed
  • 1 egg
  • 120 grams Milk
  • 270 grams S/R flour
  • 2 teaspoons ground ginger
  • 2 teaspoons cinnamon
  • 170 grams golden syrup

Recipe's preparation

    Cake
  1. Preheat oven to 170 degrees.  Grease and line with baking paper a 23 x 13cm loaf tin.

  2. Add sugar to bowl and blitz for 5 seconds/speed 10.

  3. Add remaining ingredients and mix for 50 seconds/speed 5. 

  4. Scrape down sides and mix for further 10 seconds/speed 5.

  5. Pour mixture into tin and bake for 50 mins to 1 hour.

Tip

This recipe was passed down from my wonderful Grandma who gave me my love of baking.... not to mention extra mixture on every beater! Though Grandma has gone to a better place, and the beaters are long gone, her memory lives on in this converted recipe  **** Super scrumptious when served warm with lashings of butter!!!!

    Moist, delicious & oh so decadent served with a raspberry Greek yoghurt. Oh my, I was in heaven. I used 2 pieces of fresh ginger approx 3cm x 3cm; peeled & 1 tsp ground ginger, as my mum loves the extra ginger taste & this did not disappoint her. Crunchy on outside & moist on inside. This is your Grandmas recipe & aren't Grandmas just the best! Thanks for sharing.

    made a double batch easy in TM31 and added 2 pieces of fresh ginger to increase gingeryness

    and used soft brown sugar yummo. I also like to use a ring tin so never have to worry about an

    uncooked middle

    Hi, thanks for the feedback. Glad you raised the ommission of cooking time as it must have dropped off in the upload somehow. Have reinserted so hopefully there now. My apologies!

    It does take a while for the middle to cook for me too, although it has never overflowed or collapsed. I always keep testing with the skewer as I find this helps to establish whether cooked through. Sorry it didn't turn out.

    I used the same tin, and gave it 1 hr on 170. It looked cooked, but then collapsed in the middle with a huge crater. The volume of mixture was too much for the tin and it overflowed.

    Flavour nice though.
