Spelt Banana Bread

  • 3 --- large very ripe bananas
  • 45 grams Coconut Oil (or other flavourless oil), Can use canola if you use it
  • 1 teaspoon vanilla extract
  • 45 grams Pure Maple Syrup
  • 170 grams Spelt Flour (white or whole)
  • 25 grams Desiccated Coconut, Try to use preservative free
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 teaspoons bicarb soda
  • 1 egg
  • 1 pinch salt
  • 30 grams oats, Could use nuts e.g. walnuts

Recipe's preparation

    Spelt Banana Bread
  1. Preheat oven to 180C

  2. 1.  Add broken up bananas, coconut oil, vanilla and pure maple syrup, mash for 10 Seconds, Speed 4

  3. 2.  Add spelt flour, bicarb soda, cinnamon, coconut, oats, salt, and egg, mix for 15 Seconds, Reverse + Speed 4 (or until combined).

  4. Pour into small loaf pan and bake for 45 minutes at 180C (or until skewer comes out clean).  Don't overcook and dry out!  So easy, healthy and delicious!

Tip

This is a great breakfast on the go as well!
I bake, let cool then package into separate Ziplock bags to go straight to the freezer for snacks on the run and the childrens lunch boxes.  Because of the oats, it is more filling than a normal refined flour banana bread too.  Spelt flour is also a healthier option than regular refined wheat flour.  Check health food aisles at supermarkets or Health food shops.

    mellietopaz: are the chia seeds in addition to the oats, or INSTEAD OF oats? If it’s a replacement, do I just do a 1:1 substitution by weight? Do you use dry or soaked chia seeds in the recipe? Assuming a 1:1 weight substitution, is the chia seed weight referring to its weight when dry, or after soaking please? Many thanks in advance for your help!! 🙏

    Great recipe,I used half buckwheat and half brown rice flour for gluten free and used rice malt syrup instead of maple and added a teaspoon of baking powder. Worked perfectly and a great lunchbox option, love this recipe, thank you!

    i use the walnuts and it's perfect when combined with 1.5 x maple syrup. Make sure you use pure Canadian syrup with no added sugars and preservatives

    After reading the comments I used pecans and sunflower seeds instead of oats, and I substituted half the maple syrup for rice malt syrup.

    I've been using this recipe since I first got my TM two years ago, only just now realised I hadn't rated the recipe! Such an easy recipe, my 5 yr old helps me make it for school snacks. I found it to be a little dry for my tastes when using oats, so I either add some chia seeds if I have them, or walnuts if I'm making for the weekend. I also love using maple syrup in baking, such a mild flavour, you can really taste the banana and spelt with no overpowering processed sugar sweetness. thanks again for a great recipe.

    The banana bread is a great healthy alternative to the sugar laden banana breads commercially available.

    I use a combination of walnuts, chia seeds and oats to make up the 30g as this gives the bread nice nutty texture with body and substance. 

    Overall a great recipe highly recommended.

    Yummy! Everyone big & small were very happy. We put it in the toasted sandwich maker to toast and tried with butter, banana, honey, nut butter and jam (not on the same slice!). Didn't use nuts so it could be taken to school but it didn't last past the weekend.

    Best best best BEST banana bread ever... And so super healthy! I worked it out to be 1840 calories in the entire loaf. That's just 184 calories per slice (you will get 10 slices). This recipe is becoming my new staple for banana bread!
